Is Rotisserie Chicken Healthy? You Betcha! And Here's An Easy Crockpot Recipe Your Family Will Love!

There are few foods that are as comforting as chicken and potatoes with vegetables! Today, we're going to be making this staple in the crockpot from scratch, and delving into the important question of, "Is Rotisserie Chicken Healthy?"

Healthy Crockpot Rotisserie Chicken Recipe


Ingredients

  • 1 Medium Onion, Cut to 1 inch pieces

  • 3-4 Carrots, Cut into 1 inch pieces

  • 5-6 Potatoes, Cut into 1 inch pieces

  • 2 Tablespoons Parsley

  • 2 Tablespoons Chives

  • 2 2/3 Teaspoons Onion Powder

  • 2 Tablespoons Rosemary

  • 1 Tablespoon Garlic Powder

  • 1 Tablespoon Onion Flakes

  • 1 1/2 Tablespoons Himalayan Sea Salt

  • 1 Teaspoon Black Pepper

  • 2 Teaspoons Paprika

  • 1 Teaspoon Oregano

  • 1 Teaspoon Thyme

  • 1 Teaspoon Sage

  • 1 Whole Chicken

  • Olive Oil

  • 1/4 Cup Butter, sliced


Directions

  1. Cut onion, carrots and potatoes into 1 inch chunks and put them in the crockpot.

  2. In a small bowl, mix parsley, chives, onion powder, rosemary, garlic powder, onion flakes, sea salt and black pepper together.

  3. Put half the mixture in a separate bowl, being sure to include equal portions of salt and pepper. (They tend to sink to the bottom of the bowl.

  4. Use half the mixture on the potatoes, carrots and onion, mixing well.

  5. Douse with olive oil.

  6. To the remaining spice mixture, add the paprika, oregano, thyme and sage. Mix well and set aside.

  7. Clean the chicken in running water, then place on a cutting board.

  8. Very carefully separate the skin from the breast and legs, and place the butter in between.

  9. Turn the chicken over and season with the paprika mixture.

  10. Place the chicken, breast up, in the crockpot.

  11. Season with remaining seasoning.

  12. Put the lid on the crock pot and cook, on high, for 4 - 5 hours, or until the internal temperate is 180 Degrees.

  13. Transfer to a serving dish and enjoy.

Optional

  • Transfer to a cast iron skillet and broil for 5-10 minutes.


Health Benefits of Rotisserie Chicken


One of the things I love about real food is that, as opposed to vitamins you buy in a bottle, all nutrients are bio available - which means your body knows exactly what to do with it when it is digested. Sadly, with most bottled nutritional supplements, especially those you purchase from big box stores, you are purchasing things that are not recognized by your system.


That said, real food is in a whole different category of nutrition.


For example, chicken is nutritious on many levels. According to the article entitled, "Is Rotisserie Chicken Healthy? Here's What a Dietitian Says", Sarah Anzlovar, M.S., RDN, LDN says,


"Both the white and dark meat are also sources of a variety of vitamins and minerals including B vitamins, selenium, zinc, copper and phosphorus, and dark meat provides double the amount of iron."


And best of all, you can add herbs to just about anything and make it a little more healthy.


If you add rosemary to your dish, WebMD says,

"Studies have shown that the carnosic and rosmarinic acids in rosemary have powerful antibacterial, antiviral, and antifungal properties. Consuming rosemary regularly can potentially help lower the risk of infection and help the immune system fight any infections that do occur."


Potatoes have a bad rap, but let me tell ya...

"They're rich in vitamin C, which is an antioxidant. Potatoes were a life-saving food source in early times because the vitamin C prevented scurvy. Another major nutrient in potatoes is potassium, an electrolyte which aids in the workings of our heart, muscles, and nervous system.", according to the website "Good Food As Good Medicine".


So, as you're making this delicious meal for your family, remember, what you feed them matters and real food is medicine.
